Spanish goats cheese is a true artisan product, it has been for decades but with the recent revival in "alternative" cheeses it has become more prominent in the market. Similar to Sobrasada, a good goats cheese is hard to find. UK chefs are favouring goats cheese in recipes over traditional blues due to the similar strength and the Spanish twist it adds to gourmet dishes. Spain produces a significant amount of goats cheese - all flavoured with herbs such as Rosemary, cured in extra virgin olive oil or even red wine.
Flavours are sublime, strong, deep, intense and an absolute sin to serve without slices of apple, grapes or a fine Spanish red.
