Christmas Roast Chestnuts



Chestnuts at Christmas, the perfect festive season snack? Here we have a tapa or indeed a very different starter to a Spanish meal. A few weeks ago we wrote about chestnuts dipped in brandy - a kind of festive Christmas Eve snack with an alcoholic twist! Very nice but...



...upon being served the exact same tapa in a local bar we realised that the chestnuts in brandy complimented serrano ham to such a degree we had to write about it again!

The key to this simple accompaniment is a strong serrano ham, brandy is powerful in the flavour department so a well cured Gran Reserva ham or 2 year old "Anejo" will balance out the flavours and tones very well.



This dish has to be the ultimate in "earthy" tones, aroma, texture and flavour. There would (from an unbiased point of view) be only one way to improve on this and that would be to serve up with an Islay whisky instead of the brandy.
