Simple Seafood Tapas

Spanish ham goes very well with seafood - a little like "Surf & Turf". Seafood tapas are very popular in Spain with some high quality produce such as Ortiz tuna, cod eggs, cockles to name but a few. Of course fresh is better for main meals but for quick and easy tapas preserved shellfish in olive oil, garlic salsa or brine are superb.

Here we have a simple tapas dish with serrano ham and rose clams on a bed of cucumber



Shave the cucumber into strips (a potato peeler is ideal) Add a few thin slices of serrano ham and drizzle olive oil, add the clams. A simple tapa made in around 4 minutes - throw in some cocktail sticks for the surprise guests and enjoy!
