Spanish Aubergine Tapas

A delightfully simple tapas dish, full of warm Mediterranean flavour!

You will need:
2-3 Aubergines
Olive oil
Salt and pepper

How to cook:
1. Wash and dry the aubergines and top and tail them.
2. Slice into rounds about 1-2 cms thick
3. Place into a dish, drizzle with olive oil and season generously. Leave for about 5 minutes.
4. Cook on the bbq, under the grill or gently fry four 8-10 minutes until golden brown and tender.

Very simple, very tasty. Can be cooked as tapas on their own or barbequed as a side dish to accompany meat or fish.
