Serrano Ham Stuffed Mushrooms

Besides being a gourmet meat on its own Spanish serrano ham can be an influencial ingredient in many recipes. Great in tapas too and here we have a Spanish twist on the famous garlic mushroom - an ideal starter or tapas on their own.

Ingredients:

3 slices of thick (around 3mm) serrano ham (diced)
3 generous splash of olive oil
3 cloves of garlic (minced)
Parsley (minced)
12 - 14 medium white muchrooms

Mix together the ham, parsley, garlic and olive oil

Remove stalks from mushrooms

Fill mushroom cap with the ingredients

Place on a baking tray and cook on a high heat in the oven for 15 - 20 minutes

Very simple tapas full of flavour and if you want to add some heat throw in a few chili flakes for that extra bite.

Who said "Life is too short to stuff a mushroom"? They were wrong! That recipe is so simple and will be delicious!

Sheffy: Agreed, plenty of flavour in the humble mushroom and a whole host of combinations to stuff them with, perfect bite sized tapas and very simple to make :)
